The best resource I've found for this, with many illustrations, is at this page You may have to have your browser translate it, the text translation may not come out great, but the illustrations, examples, and tables of what the values do to each breed are very informative... If you go to the links on the right, for 'rotation' and 'swap', it shows exactly how those values work. I have also found this agent to be very helpful.
Basically rotation is 128 by default, and moving it down rotates all the creature's pigments counterclockwise on a color wheel while moving it up rotates all the colors clockwise... swap swaps the red and blue components in the creature's colors, and also defaults to 128, which means no swapping, and it swaps more and more of the red and blue pigments with each other as you go towards either 0 or 255.
