Since she comes from Civet Norns, it is most likely Grendel C. The only breed on that slot would be the C22C3 Boney Grendels.
But yeah, having Banshee Grendels would probably influence her look if you do not have the Boneys.

i'd imagine if you had banshee grendel pack it could appear as a banshee grendel, considering she is part civet.

Not that much of a change actually. Bruin Norns are slot Norn A, Bengals are Norn B and Civet sprites are on Norn C.
The body gene must have mutated Grendel A/B/C. When you do not have a certain sprite set, it defaults to the closest below it, which is in this case Grendel A, C3 Grendels.

The appearance gene must have mutated to the point where it completely changed.

Not really illogical. Appearance genes can mutate as well. Mutating from one species to another is common.
