My favorite breeds were always the ones that could swim or fly. For example, mernorns and butterfly norns in Creatures 2. I was also disappointed that there weren't more breeds like this for C3/DS when I was playing Creatures frequently.
Agreed with Rascii. That and I gotta say I loved the diversity in the 3rd party C2 breeds. I loved ones with weird parts like the Draco and Scorpio norns, also loved colorful ones like Flora Norns, that way you could make the coolest crosses.
As a whole new breed though, I always wanted something that had another "extreme" appearance, something not too norn-y and a bit more beastly or showy. I got tired, real tired, of the new "breeds" that came out looking like a new genome, or looking like someone dabbled in MS Paint.

I agree with Geek2Nurse that a fox-inspired norn would be lovely.
I'm actually currently working on a breed which aims to fulfil a few wishes of mine (and so far it is all working out nicely!). I will be releasing a beta version of it soon for feedback. Though I must apologise to Karias in advance - the current breed appearance is a mixture of 'official' body parts recoloured desaturated blue (female) and purple (male) so not really all that exciting!
I think I'd like a wolf-like breed, with dark, rich colours and high pack instincts. Perhaps a wolf-like grendel, actually, that would hunt in packs. I love the idea of a fennec (fox) norn, though.
But a wolf grendel breed I think would be awesome.
No fennec, but I did concept these at one time. Never went past the concept stage, though. I have too much on my plate. Maybe they'll serve an inspiration or something.
Ooh, I love the one with bangs, Moe. I don't think I'm ready to tackle breeds just yet...my latest agent project (spreading ivy) is currently straining my neurons to their limits.

Time always seems to be the big issue. With time, I would perhaps have made the dino norns as well... But those image files are long gone, and the concept near forgotten...

I'm not surprised so many breeds fall to the wayside half-way through creation. When you look at the number of sprites needed, it's quite intimidating! I've found that even just making basic recolours like I've done takes more time than you'd think (and that's with batch automation doing most of the hard work for me!). Making your own custom 3d model or painstakingly drawing each individual sprite must take days and days.
